The Old Fashioned, substituting simple syrup for maple syrup for a smooth change and less sugar. The Old fashioned was first conceived in the 1800's by James E. Pepper, supposedly the Old Fashioned was the first cocktail created. The cocktail was invented in Louisville Kentucky but never really caught on, until New York found out.
Whisky way back in the day was nothing similar to what it is now and was far from tasty. A lack of knowledge about distillation meant that the whisky burnt going down and the ensuing hangover was felt in full force. Whisky drinkers added sugar to make the drink easier to knock down, but now they needed something to add a bit of flavour. Bitters added flavour and balanced out the sweetness of the drink. Initially created to calm upset stomachs, bitters added flavour and helped to keep down one's supper if one had a wee bit too much to drink. The perfect mix was created.
